I make this in my bread maker on the Quick cycle but you can also bake in oven. You can substitute canned pumpkin for the applesauce. I even pureed a can of mixed veggies and used that, and you would never guess it was veggies in there. :)
1/3 cup Milk or Buttermilk (I use evaporated milk)
1/2 cup Olive Oil
1/3 cup Brown Sugar
2 Eggs
1 teaspoon Vanilla
1 cup Unsweetened Applesauce
1 teaspoon Baking soda
1/2 teaspoon Salt
1 teaspoon cinnamon
1/2 teaspoon Salt
1 teaspoon cinnamon
1 1/2 cups Unbleached Flour
1/2 cup Stone Ground Whole-Wheat Flour
1 finely chopped Granny Smith Apple (optional)
1 cup Nuts chopped (optional) I use pecans and walnuts
Cream together oil and sugar.
Add Applesauce, eggs, and vanilla.
Sift together dry ingredients.
Add alternately with milk.
Blend well.
Stir in nuts, and pour into a greased and floured loaf pan.
Bake at 325 degrees for about 1 hours.
